This weekend I had time to stop by the farmers market. I picked up some gorgeous tomatoes and ultra fragrant purple basil which I threw that together with some fresh mozzarella and balsamic vinaigrette at lunch time. It turned out to be a really wonderful little caprese salad that’s simple to make with the right ingredients.
[Ingredients]
- 1 Heirloom tomato
- 5 small cherry tomatoes
- 5 purple basil leaves
- 1 green onion
- 5 fresh small mozzarella cheese balls (Trader Joes Ciliegine brand)
- 3 slices of black diamond sharp cheddar (0ptional)
- rock salt
- Balsamic Vinigar (Trader Joes brand)
- Extra virgin olive oil (Trader Joes brand)
Instructions:
Slice tomatoes and place them on a plate. Next, thinly slice a little of the green onion and sprinkle on top (about 1 tsp). Add sliced mozzarella cheese and optionally some pieces of broken up cheddar slices. Chop the basil leaves and sprinkle the pieces all over.
Add salt to taste and drizzle with a mixture of 40/60 balsamic vinegar/olive oil. I usually combine both in a jar and shake it vigorously before drizzling.

Thanks very much for that! My dad recently harvested a garden full of tomatoes before the winter really set in, and I find myself the proud owner of two or four buckets worth! Of course I couldnt eat them all, but I did find a website full of lots more tomato recipe at this site. A whole website dedicated the topic!! Crazy what you can find on the internetz nowadays!!
