I like me some fried greasies from time to time, and when I do potato pancakes often the bill. This is a pretty standard recipe not much different from a glut of them on the internet, but I feel that the magic happens in the cooking more than the prepping, so I took some pictures of the process. Really all you need to get them done quickly is the ingredients, a coarse grater and a non-stick pan.
[Ingredients]
- 1 large potato (or 2 medium ones)
- 1 small onion
- 3 tbsp all-purpose flour
- 1 egg
- 1 pinch baking powder (optional)
- 1 pinch paprika (optional)
- 1/2 tsp salt (or to taste)
- pepper (a pinch or to taste)
- canola or vegetable oil
[step 1] Peel and grate the potato and onion on the coarse side of a grater into a bowl.
[step 2] Add the egg, flour, salt & pepper (to taste – or try a half teaspoon to start) and stir until mixture is uniform.
[step 3] Heat oil in a non-stick pan.
[step 4] Using a large serving spoon, stir the mixture and place a spoonful into the pan with hot oil. Fry on each side until golden brown and serve with Apple Sauce (Cinnamon Apple Sauce is nice too).
