My ideal hamburger is like those you find at In-N-Out. It has a relatively thin seasoned patty cooked medium well, onion, lettuce, tomato, thousand island dressing and ketchup all on a soft white bun. I never understood the appeal of those thick rare in the center burger patties advertised in restaurant burgers. To me a great burger’s main component is not the meat, but rather a combination of all ingredients. Here’s how to make your own delicious thin burger patties.
Ingredients
- Fresh Ground Beef (I use the 90/10 less fatty blend)
- Onion
- Paprika
- Salt
- Wax paper
[step 1] Take the onion and slice it down the center. Save a couple of the large center slices to grill later, mince the rest. Add minced onion to a bowl.
[step 2] Add ground beef, a pinch of salt and a couple of dashes of paprika.
[step 3] Mix well.
[step 4] Form a small ball (roughly the size of a handball) and put it onto a sheet of wax paper, cover with another sheet of wax paper and squish it down using a cutting board.

NOTE: Even though patties look large after being squished, they will shrink quite a bit once on the grill.
[step 5] Throw them on the grill until well done. Keep a close eye on ’em though, they cook quick.
