Swedish Pancakes

This is a recipe that brings me back to weeks of cold gloomy winter days in Germany. My mom would make pancakes to cheer everyone up when it was cold dark and wet outside. The sweet smell would lure depressed family members from the far corners of the house to sit, talk and smile at the dinner table. Here’s how to make them yourself:
[Ingredients]

  • 3 Eggs
  • 1 1/4 Cups of Flour
  • 2 1/2 Cups Milk
  • 2 tbsp Sugar
  • 1/2 tsp Salt
  • 2 tbsp Butter
  • 1/2 tbsp Vanilla Extract

[step 1] Combine all ingredients in a blender. Blend on lowest speed for about 1 minute. Avoid higher speeds you don’t want it to generate foam.

[step 2] Heat a non-stick pan over medium flame and add just enough batter to thinly cover the base of the pan.

[step 3] When the batter starts to bubble slightly and dry in places on the surface, it’s time to flip. Grab a spatula and wedge it underneath part of the pancake, then lift it up and tilt the pan to flip the pancake without ripping it. This’ll take some practice.

[step 4] Don’t overcook! These flapjacks should be light golden in places where it has contact with the pan.

[step 5] Serve topped with powdered sugar and grape or lingonberry jelly.
